Plus mango dressing, cowboy jam and more

Tasty Tuesday: Yorkshire pudding

Have you ever made Yorkshire pudding? It’s not the kind of pudding we think about in America, but salty, savory buns to go with a roast or dinner. It’s actually quite delicious! We made some for our Country Club last year when Wood Sprite did a presentation on England and they were really good. Here’s a recipe if you’d like to try them out; they’re really perfect for cold days like these.

If you’re a fan of tomato jams, you might want to try this version. Called Cowboy Tomato Jam, it includes tomatoes, jalapeno, cumin, salt, sugar, lime and ginger. Sounds pretty interesting, right? As a person who does not like tomatoes themselves but enjoys them in everything from catsup to soup, this might be something I’d like to try. How about you?

And if you are looking for a crunchy, sweet yet healthy snack or meal, how about this baby greens salad? It features pomegranate, pecans, mango dressing and goat cheese. My mouth’s already watering—how about yours? The mango dressing includes ingredients like pepper, honey, olive oil and lemon juice—mostly things you probably have around the house already. All you’ll need to get is the mango!

Another fun, healthy recipe for the New Year, try this idea with beet and goat cheese goat hummus. I bet it’s a really great way to get in your beets when you don’t like to eat them in the first place, too. It does call for chickpeas and tahini paste, so you will probably have to venture out to the grocery store to get some ingredients.
