Tasty Tuesday: Brown sugar potatoes

This week’s Tasty Tuesday is brought to you by Mr. Sara S. My husband’s online moniker is Indy—yes, after Indiana Jones—just so you know who I am talking about in the future. Indy loves to experiment with recipes, tweak them and make them his own and his famous brown sugar potatoes are an example of the magic that happens when you let him cook an afternoon away for fun.

All you do is dice up some potatoes into cubes—he removes the skin so they can fully caramelize but you don’t have to—and sauté them in a pan with some olive oil. He adds in salt, pepper, brown sugar, cayenne pepper and garlic (fresh when possible) to taste and cooks them until they are golden brown and amazing. I’m not giving measurements for a reason: He doesn't use them. He really does taste the potatoes as he goes along until he likes them, so they’re never quite the same, but they’re always soooo good.

These things are spicy-sweet and addictive; they are great for taco night, or you can add some cream or milk and make them into a really delicious potato soup.

Most of our friends and family eat these as is, but you can add cheese or sour cream if you want. I’m sure the bacon lovers could go crazy with some meat, too, but they really are perfect just as they are. Sometimes I think he should just sell his recipe to one of the big restaurants with bland soup on the menu and make a killing—but then we could eat them while dining out and he’d have an excuse not to make them for me!
