Better Super Bowl Snacks
On Super Bowl Sunday, the three things you absolutely need in my book are a TV, beer, and... snacks. Game-worthy snacks. Snacks that push the envelope because, hey, let's be honest-- this only happens once a year and it's on part with Thanksgiving and Christmas as a holiday you can eat whatever and as much as you want. Don't waste that opportunity.
1. Quesadillas: These were one of the first things I learned to "cook" when I got to college, and I still take a lot of pride in them. Ok, not pride, but they are delicious. Typically I just throw the cheese inside the tortillas and flip it over. But the Super Bowl calls for thinking a little fancier. If you think so too, check out this recipe for Chorizo and Shrimp Quesadillas with Smoky Guacamole. Yes, it's Rachel Ray. Deal with it.
2. Fresh salsa: Salsa is a staple for the Super Bowl. It's cheap and easy to bring along. But making your own salsa is 10x better, and it only takes half an hour. If you do it the day before and let it sit overnight, it's even better. Make it with this recipe.
3. Louisiana-style snacks: The Super Bowl is happening in New Orleans this year, did you know that? If you want to get local about it, you can take some classic New Orleans dishes like the po' boy, gumbo, or jambalaya and adapt them to your kitchen. Check out the healthy version of these suggestions over at Clinton Patch.
4. Jalapeño Poppers: Yes, there is a homemade version. You don't have to just buy the frozen ones and deal with the freezer burn and cheese that is way too hot every time… Here's a great recipe from Eat. Live. Blog.
I'd love to hear what you're planning to make for the Super Bowl. If you have a suggestion for a new or classic snack, drop it in the comments.
